Diabetic Friendly Spice Cake Recipe- ASAP!

Hello All,

My friend of many years ( a T2 now on insulin) and our families are having our yearly "Birthday Bash for the many" We celebrate around 4-5 all at once. After many years of him making me a my sugar friendly pie ( to die for..) he has finally requested something for him. He would like a spice cake. Now, I hope that someone would have a good recipe because I am not finding a thing!
The party is tomorrow. Help!

By my count the recipe has 16 servings and each serving has 226 calories, 15.6 g fat, 15.2 g carbs, 1.6 g fiber, and 4.9 g protein. Pretty darn good!

I used my favorite recipe carb count site.

Recipe seems very interesting and enticing.

For me splenda is not great choice as it gives me the trots.

I ran all over town looking for Almond Flour and I could not find any! It looks like I am going to have to make something similar.

Perhaps, baking splenda contains half sugar and half splenda.

Most "health/natural food" stores carry almond flour. Baking Splenda has sugar in it, I'm not a baker but perhaps some Truvia would work better, as far as minimizing carbs.

I like truvia and no negative feedback.

I have to to apologize. I didn’t look and see where you live. Where I live it is now carried in many regular grocery stores as well as places like Whole Foods. I think you might have to order it over the internet. A good replacement might be to grind almond yourself. Perhaps others have done this.

I have been using a combination of flaxseed meal and coconut flour, and I like the texture I get. Have not made a cake, though, only muffins. I don't use any sweetener, I don't like it. Coconut flour holds the moisture a bit better than almond flour. Got it at Whole Foods, it's not expensive.

Hey No problem. We have a store that usually carries different types of flours and foods. I found rice flour and gluten free stuff but no almond flour. I will be looking online or just maybe try to make my own .
