Faux Yummy Food :-) #1

I love food so I've recently started to become really creative; gleening tips from different sites, books, magazines and tv shows in order to eat relatively healthy. Tonight I had a really good pizza dinner that didn't make me feel bloated or like my sugars shot up.

Here is the recipe in case you are interested :-)

Pepperoni Pizza

4 tbsp. Pasta Sauce (i prefer marinara)

1/4 cup Low fat/part skim shredded italian blend or mozzarella cheese

1 Light Multigrain English Muffin

6 slices Turkey Pepperoni

1 tsp each Oregano, Garlic powder, Crushed pepper for garnish- Optional

Slice the muffin in half spread 2 tbsps. of sauce on each half, then sprinkle half of the cheese on each half.

Chop up the pepperoni into small pieces sprinkle half of the pepperoni bits on top of the shredded cheese on each half of the english muffin.

Place both halves on a cookie sheet lined with a sheet of foil. Bake in a 400 degree oven until cheese melts, about 15-18 minutes. Garnish with desired spices/herbs and enjoy :-)

Hey–This sounds good! Think I might switch the muffin out with Arnold Sandwich Thins that I like to use. They are whole grain and are a little thinner and about 6" and only 21 carbs total. So I could make 2 mini pizza’s using your recipe. Thanks for the idea, can’t wait to try.

@ Schmutz Good idea, I’ve seen those sandwich thins at the store, but never picked them up. I may try some next time around. The English muffin is smaller and has 26 grams of carbs per muffin so the thin is probably a better choice. I’ve also been thinking about using low fat/whole wheat tortillas to add a “mexican” twist LOL
