My breakfast of choice this morning was a flaxseed meal muffin. Here's how you make it: 1/4 cup flaxseed meal 1/2 tsp of baking powder 1 tsp of cinnamon 2 tsp of truvia or sweetener of choice (optional) 1 egg or egg beaters equivalent 1 tsp of light olive oil or light cooking olive oil 1 coffee mug (not a cup)
Mix all the ingredients together in a coffee mug (not a cup). Microwave for 1 minute... and ouala! I added a small amount of chopped walnuts to mine, before nuking (about 6 grams)... and ate it with pumpkin flavored cream cheeses spread. :) It is very, very filling... 248 calories, and pure fiber and Omega 3 fats. NO GLYCEMIC LOAD. :) Enjoy!

Thanks Liz! This looks yummy. For myself, I will use my egg sub but looks so easy. I would probabaly make a whole batch- I am too lazy to do this every morning. I have often wondered about flaxseed and BG. I notice when I use ground flaxseed on my meals I have a better 2 hr number.
Will have to try this. I’ve been yerning for bread or some kind of baked good.
A while back I ran into a microwave-in-a-cup chocolate cake recipe. I was intrigued by being able to make a single serving quickly. But the results were AWFUL. The cake was too dry and substituting a sweetener for the sugar just didn’t work.
Thanks for his recipe! I have recently discovered a flaxseed flour bread in a local grocery store. I was surprised at how delicious it is : D. I like how easy this recipe is - instant gratification is my thing.
Experimented this morning with adding pumpkin and using pumkin pie spice in place of cinnamon. The pumpkin made it more moist and I had to microwave it 15 seconds longer. But I didn’t put enough to affect the overall taste. Used 2T (1/8 c) of pumpkin. Next time will double that. Once I get the pumpkin flavor figured out will add some chopped walnuts. Thanksgiving is just around the corner after all!
I don’t know of any… But I can tell ya a guy gave me this recipe, and it takes just 1 minute in the microwave. It’s really as far from baking as you can get. So short a recipe, I have it memorized now. You don’t even have to man a real oven, just a microwave. lol
Aside from my Peanut Butter Cups, http://www.tudiabetes.org/profiles/blogs/guiltless-large-peanut-butter, I don’t have more microwave meals I can think of, right now… Ummm… I do know that you can use flaxseed to make pancakes, too… I think one is 2 servings, and the other is 1… I’m not sure. Haven’t made it yet.

mix together and fry in a good amount of butter (it soaks it up) serve plain or with sugar free syrup (their suggestion, not mine… I don’ trust sugar free things in the stores. lol)
Hi - I bought milled flax seed and it had 4 carbs per 2 Tablespoons. Since a 1/4 cup is 4 tablespoons that means my muffins only have 8 carbs in them. Maybe you are using different flax seed to get 18 carbs?
@Rich, I entered the nutrition facts of the Bob’s Red Mill Flaxseed Meal that I got, plus all the other ingredients for this muffin, on the Nutrition Data site and it analyzed all of them, together, as a recipe. While 8 grams of Carbs (in the form of Dietary Fiber) very well came from that flax, the extra 2 grams probably came from cinnamon. The extra 8 grams came from the Truvia (which contains Erythritol) which I added to my recipe – a sugar alcohol which does not raise blood glucose.

Thank you for this recipe. I am new to TuDiabetes and love to find recipes for no flour-no sugar. I have a friend whose daughter is pre-diabetic. She cannot have wheat or gluten. I try to share with her. I will send my recipes along as I find them tried and true. (At least by my standards…) Thanks again!
