What is promised is due, so without further ado… here it is… My recipe for a fruit cobbler you can make in your coffee mug! (Your carb
content will depend on the fruits you use. A berry only cobbler will have a lot less carbs.)
What you'll need:
Fruit of your choice, in this case I picked:
10 blackberries, 10 raspberries, and 1 peach

Two stoneware coffee mugs (so that they are safe to go in the oven)
1/2 tbsp of butter
4 tbsp of almond flour or 56 almonds, grated (You can use a simple nutmeg grater for this. They're nice, and they hold all your shavings. I got one at the local fancy cooking shop for about $5 once...)
1/4 tsp of cinnamon
1/4 tsp of nutmeg
1 1/2 tsp of brown sugar
2 tsp of water
When you grate the almonds, set the stubs aside. Peal the peach if you like (or not... I don't), and cut in slices. Add half the peach to each coffee mug. Similarly, divide up the other fruits and add to the mugs. Add 1 tsp of water to each mug, as well. Mix the flour, sugar, and spices, and mush up the cold butter in it with a fork, until it's all crumbly looking. Cover fruit with the mixture and with the remaining almond stubs, if you have any. Put the coffee mugs on a baking sheet and in the oven at 425F for 20 minutes. When they're done, carefully remove the coffee mugs from the oven, and let them rest on a trivet for about 15 minutes.
