Oh My goodness, Blueberry Cobbler that won't make your sugars go crazy!

Hello all! After much experimenting on trying to make a decent cobbler recipe that didn’t make my BGs go through the roof or make me have to take a ton of extra insulin, I have found the recipe! Just wanted to share since blueberries are in season right now. I will be experimenting with other fruits soon to see how they work out, I will let you guys know :slight_smile:

Blueberry cobbler-makes 6 servings

First you need to cook the blueberries. So mix:

3 cups blueberries
1/2 cup Splenda
1/4 cup of butter

in a skillet and cook for a few minutes until the berries are all hot and bubbly, pour into your sprayed pan (I used a 1 inch high small casserole pan)

Now, time for the cobbler. This was based of a recipe I found on a low carb site…

Combine:

1 cup of Low Carb Bake Mix-CarbQuik works best
2 T Splenda
1 tsp Vanilla Extract
1/4 tsp salt

Cut in 1/4 cup of butter into the flour mixture with a pastry cutter or fork until it resembles crumbs. In a small bowl mix:

1 egg
1/4 cup a mixture of heavy cream and water (do half cream, half water)

Add the egg mixture to the flour mixture and mix until moistened. Drop spoonfuls of the cobbler topping onto berries. I’d try to make about 5 or 6.

Bake at 400 degrees for about 15-18 minutes or until golden. Serve with vanilla ice cream or whipped cream. Enjoy! Each serving has 29g of carb and 15g of fiber! So if you are like me and can subtract some of fiber from the carb count, this becomes an even better choice. I only had to bolus for 22g of carb!
