To celebrate this special day, I’m going to make a double batch of (wait for it):

I can’t emphasize enough just how mind-blowingly tasty these things are! And at less than 3 (yes, I said THREE) grams of carbs per serving, you can’t go wrong (unless you eat the whole pan, which isn’t possible because they are too nummy-rich). Don’t ask me how I know this…

Guilt-free Hot Chocolate (or nearly)

Start with Half and Half, not regular milk
Heat in the microwave, stirring occasionally, to somewhere short of boiling
Thoroughly whisk in powdered cocoa, the highest quality you can find
Add some vanilla, JUST enough so you can tell there is something there
Sweeten with your favorite brand of Stevia
Whisk a little more, till bubbles form
Serve

People generally refuse to believe that there is no sugar added. And on a cold night . . . mmmm. :sunglasses:

I make the same, vanilla and all, but with that new milk substitute “Ripple” (unsweetened 8g protien 0g of Carbs). Has that half and half mouth feel. Kid says its “legit”. Need to try it on his non-diabetic friends to be sure though.
