High protein, low sodium, low appetite. How do I eat?

I started on this low sodium diet (less than 1000 mg/day) about 10 months ago. About 5 months later, my kidney function had improved, but my hair started falling out, so my doc said I needed to up my protein intake. I am full all of the time, so he suggested I add a whey protein shake. After about 2 weeks of 60g protein/day, my hair stopped falling out in large amounts. Now it's normal.

Currently my diet consists of the following:
Meal 1 - (25g protein) whey protein shake with coconut milk and berries

Meal 2 - (21g protein) 3 eggs with about 2T salsa

Meal 3 - (20-30g protein)some type of meat and low carb veggies

My doc wants me to eat more protein, but I tried increasing the whey protein and I just can't do it. Any ideas how to get more protein with low appetite?

My kidney doc said 1000mg/day was too low. I told him that the human body only needs 500 mg/day, so 1000 should be sufficient. He doesn't argue with me anymore, because magically with that low sodium my eGFR has changed from 14 in Feb to 49 in November.

If your phosphorus levels are ok, then I would try eating some nuts. Good protein. Have you talked to a renal dietitian? The docs aren't usually that good with helping us eat, they just know the basics. I have found the renal dietitians to be excellent in helping with poor appetite and needing to get the right nutrition based on our health and kidney function.

I used to have phosphorous issues, but I currently don't have issues.
I'll try nuts.
