I found a cracker recipe online a while back to make crackers with parmesan cheese and no flour. I cannot remember what else is in them, I cannot find the recipe and I cannot find it online. Does anyone have any good recipes for flourless crackers? Or VERY low flour? I am working hard to eat very few carbs. But every now and then, I miss the crunch and while I love cucumbers and celery, it isn’t what I want.
Thanks for any low/no carb cracker recipes/ideas you might have.
Hey Michelle - I found this recipe just now (never thought of making my own crackers at home - but I do bake with flax seeds - which is what the recipe uses along with Parmesan cheese). The parmesan cracker recipe I use is just grated parmesan (not the powdery stuff) baked in the oven for about 5 minutes, or you could microwave them. Very crispy.
Here’s one & almost zero carbs
Mix I cup golden flaxseed meal, 1/2 tsp salt, 1 TBS garlic powder with 1 cup water. Let sit 10-12 min. Either use parchment paper or spray a cookie sheet with non-stick spray. Form into rounds (pretty thin is be best) & bake 250 oven for 2-3 hours. You can add other things like poppy or sesame seeds.
Yep, on a low temp. Makes them really crunchy & crispy. If you don’t want to go to the trouble of making individual rounds, you can make one big one & break it up. But, it doesn’t come out as well.
