Low-carb breakfast option

Hi everyone,

For those of us trying to eat low carb during pregnancy (or whenever), I recently came across a "bread" recipe that I have really been enjoying for breakfast. It makes one "mini loaf," and I can eat half of it with peanut butter, and be completely satisfied until lunch time. It's from a cookbook called Paleo Indulgences by Tammy Credicott.

The original recipe calls for coconut flour (not chia bran) and coconut oil, plus 2-3 Tb water. When I make it I use olive oil instead of coconut oil so it doesn't taste too coconutty, and I'm sure melted butter would work well too. You can also make it in a Pyrex 2-cup liquid measuring cup instead of a mug if you want.

For low-carb breakfast at work I eat Kavli crackers with cream cheese and lunch meat.

I haven't seen those before--how many carbs do they have? And do they keep you full for awhile?

(PS I haven't looked at the rest of that website; I just found the recipe there so I wouldn't have to retype it--I have the book).

I think there are 3 carbs per cracker (they are about the size of a graham cracker, but much thinner). I eat 4 and bolus for 15 carbs (to cover some of the carbs in the cream cheese as well). Along with a cup of coffee, it works for me for breakfast. If I'm thinking I will be extra hungry, I add another piece of lunch meat to each one. I like it because when I was doing much lower carb than I am now, I craved crunchy like crackers and this hits the spot!

Oh, I get them at my local grocery store, but I've also seen them at the organic market as well. They do come in a few different flavors and that can vary the carb count. I like the original red box the best!

Oh, and now I see that you are in my neck of the woods - both Wegman's and Weis have them. Not sure about Giant or Giant Eagle or Food Lion (depending where you shop). MOM's Organic Market also has them.
