I used to work at KFC. This is basically how they make their barbecue chicken sandwiches (except their sauce and bread will give you high BG numbers).



Barbecue Chicken Sandwich

leftover cooked chicken

sugar-free barbecue sauce (see Condiments section for a recipe if you can’t find any)

lettuce or steamed cabbage leaves or low-carb bread or bread substitute

sliced cheese (optional)

Pull the leftover chicken off the bones with your fingers or a fork and break it up into appropriate sized chunks or shreds. Mix in some barbecue sauce. Heat chicken mixture in microwave if you want it hot. Spoon onto desired leaf or bread or bread substitute. Put a slice of cheese on each sandwich and close up each sandwich as desired. You can make as many sandwiches as you wish with this recipe, just freeze the leftover chicken mixture and defrost or heat in microwave.
