@SEAGATOR - I hear you there. Not a fan of grass in my food. I am not adverse to going to a health food store. I find that I am lucky enough to find a lot of what I am looking for in the organic section of the neighborhood grocery store.
Take a look at Patti LaBelle’s cookbooks, including Patti LaBelle’s Lite Cuisine
Also, At Home with Gladys Knight
Exactly!!!
Thanks for the wonderful description of “Soul Food” Gary : and corinna, I will check out Patti’s books and Gladys’ s::Great singers and great chefs, too, I have heard…

Me too! Particularly things that are portable and/or very easy to prepare.
I just posted a recipe for chili that is pretty low carb! Check it out!
Great recipe. In my book, you get major points for this recipe. You followed the rules for “real” chili (http://www.chili.org/rules.html), in particular rules I.A.1, I.A.2 and I.G.
I like to start with a mixture of whole meats, often adding sausage. I do mine in a slow cooker and often add a few dried peppers (like habanero).
The good thing about your recipe is you can prepare a large batch (4-5 lbs of meat) and then freeze the result. You can place the chili in quart plastic bags in your freezer for convenient ready meals during the week.
ps. Remember to write the contents and date on the plastic bag or you will forget what stuff is until 2022.
Looks wonderful! Carb count? Sorry if I missed it.
Thanks for sharing how to cut up whole tomatoes. Love hints like that.
Looks amazing. I am so used to Cincinnati/Greek style chili, I was shocked to see “real” chili (8 carbs per half cup) but it adds up since it is more of a topper.
@Gerri - I have updated my post to show the nutritional information. Important nutrtion info is: (With avocado, cheddar and sour cream)
Calories 422
Calories from Fat 196.2
Total Carbohydrate: 16.78 g
Protein: 30.04 g
@Jim - I am not sure what you mean by Topper? Serving size for this recipe is about 1 1/2 cups, and with the avocado and cheese (that has a few carbs) the chili is almost 17 grams of carbs. Take them out, and you are down to close to 10 g of carbs per serving.
@bsc - LOL. (Me diggin in my freezer…) What the heck was that stuff? I love using my food saver, because I can seal the bag, and then lay it flat so it freezes flat as well. Saves a lot of space that way.
Cincinnati chili is served on top of pasta. Below is a picture of what it looks like. Needless to say, Cincinnati chili violates rule I.A.2 and doesn’t help the carb count
Its great for chilidogs only way I have ever eating, but I’m not native to the area
Thanks. Eager to make this.
