Paleo Popcorn

I LOVE popcorn. It’s a borderline obsession. If I had my choice on a lazy Sunday afternoon, I would rather snack on a HUGE bowl of popcorn in front of the TV. Although it’s not terrible on my blood sugars, I know that I do have a significant rise in my numbers.

So when I adopted the Low Carb way of eating, I knew I would miss popcorn most of all. _ immediately began looking for a substitution for this buttery salty snack. Low and behold, I found cauliflower!

Below is my version of paleo popcorn. At last I can sit in front of the TV on a Sunday afternoon and mindlessly snack on something that I love.

1 head of cauliflower (I prefer fresh, but if frozen is all you have, it’s fine) cun into small, popcorn-like pieces
olive oil
3TB butter, melted
salt & pepper

4.4g CHO for the ENTIRE head of cauliflower!

Set oven to 400 degrees

toss cauliflower pieces with olive oil and salt & pepper.

Roast until cauli turns golden brown…drizzle with melted butter and roast for 5-7 more minutes.

This can be eaten hot or cold.

Lucky you; it sure is on mine.

This sounds intriguing. Have to give it a try.

It’s very good roasted with Parmesan cheese and garlic, too.
