###Roasted Cauliflower with Sun-dried Tomatoes
1 cauliflower cut into florets
2 tbs olive oil
3 chopped garlic cloves
1 lemon zested and juiced (or 2 tbs lemon juice)
1 teaspoon red pepper flakes
1 tbs fresh thyme
1⁄2 cup olive oil
3 tbs chopped sun-dried tomatoes
3 tbs chopped kalamata olives
2 tbs capers
salt and pepper to taste
Preheat oven to 400. Cut cauliflower into florets, chop garlic. Mix 2 tbs olive oil with garlic and toss cauliflower with garlicky oil until coated evenly. Place cauliflower on baking sheet and roast for 10 minutes. After 10 minutes turn cauliflower.
In a small pot add 1/2 cup oil, lemon zest and juice and red pepper and let it heat for 10-15 minutes. Place roasted cauliflower in a bowl and add oil, sun-dried tomatoes, olives and capers. Add salt and pepper to taste and serve.
