This week at my job there were at least three cakes for various birthdays in my department. I didn’t eat any of them, not even a sliver. Not even an accidental frosting lick (you know what I mean). My birthday is at the end of the year and everyone knows I am Diabetic so they better not get a cake. But then what should they get? I was thinking diet Jello shooters or Sugar Free Pudding shots. Something fun that can be shared. Does anyone else have any ideas?
hmmnn… how about one of those edible arrangements…? theyre fruits and still has sugar/carb but at least its kinda healthy…hehehhe… well. its your day anyways, eat some and just dont forget to take your insulin/ or pills or whatever you use for your D… remember you can still eat pretty much everything but in moderation…
If someone is a baker, they can make a low carb alternative. There are groups with low carb ideas, and dLife has some pretty great recipes…
I don’t have the recipe, but you could probably google it, but it is this yummy cool whip and jello mix. You get a thing of cool whip (I pick the kind with the least amount of carbs) and a packet of Sugar Free jello, and somehow you add water to the mix and stir it all in to the cool whip. anyways- it’s really yummy… I’ll see if I can figure out how it’s made. It’s like a Mousse texture, that’s what the girls made me for my birthday.

2/3 c. boiling water
1 pkg. Jello (4 serving size)
1/2 c. water cold (ice cubes)
1-8 oz. Cool Whip
1 graham cracker crust (6 oz)
Stir boiling water with Jello until dissolved. Add 1/2 cup cold water or ice cubes, then stir in Cool Whip until smooth. Refrigerate 10 minutes. Spoon on crust and wait 4 hours, or overnight until until firm.
I didn’t have it in a pie crust, we just had it in little cups.
Very impressive that you didn’t have even a crumb or accidental frosting lick! Guess you’ve got some time to figure out your birthday treat:) Cheesecake is a great low carb dessert, though sure not low calorie. Just substituting a sweetener for sugar & using ground nuts for crust is all that’s needed since there’s no flour.

OK, not even once!!! It really doesn’t matter if I believe you hee,hee. I am not much of an sweet eater (thank gooness) but once in a while at work i will have a sliver of cake if it is made with that sweet frosting, if with whip topping little bit more. This just means i have to count my CHO (carbohydrates) into count. I will even take a walk if i don’t feel like pumping in more insulin to cover it. So have a small piece of cake on your birthday, that is made with whip topping or now days cakes are made with Splenda as well. I have not had one yet but i have been told it is good. If i find the receipe i will let you know. Your B-day comes only once a year so enjoy it!
