Okay so lately I have been craving cake real bad. And I hate the fact that most cakes are loaded with sugar. BUT I have found a cake that is pretty good with carbs and TASTES amazing.
Its Jello Cake.
All you need to do is get a box of French Vanilla cake, a box oof sugar free Jello, and a container of cool whip. Since sugar free Jello has no carb you don’t have to worry about that, cool whip is pretty close to carb less as well so all you have to really count is the carb in the cake.
All you do to make it is
bake the cake as directed on the box.
prepare the jello as directed (without chilling it)
Poke holes into the cake
pour the liquid Jello over the cake
Put the cake in the Fridge for a minimum of 2 hours.
After allowing to set in the fridge frost with the cool whip.
Does this use like the Betty Crocker French Vanilla cake mix? The whole cake has 420 g of carbs and each serving has 35g. An alternative might be to use a version of the recipe of Linda’s low carb vanilla cake with almond flour, flax flour and protein powder. Then each slice would be a true low carb piece of heaven.
My daughter made some low carb cheese cake for Christmas. It had a pecan crust and was sweetened with stevia. If I recall it only had a couple of carbs per serving. Very tasty, low carb but not low calorie.
Real whipped cream with a non-sugar sweetener is low carb & doesn’t have the chemicals in Cool Whip.
Coconut flour is another low carb alternative flour. It’s lighter than almond flour if you need a not heavy texture. I’d stay away from flaxseed meal. Chia seeds are a healthier option. Flax is estrogenic. I grind chia seeds in a coffee grinder. Chia seeds can also be used as thickener.
Cheese cake is a low carb dream come true, so is ice cream if you make it yourself.
I’ve used several substituting stevia & powdered erythritol & liquid Splenda & erythritol, but haven’t quite gotten the sweet level right yet. It’s a taste as you go thing & I don’t like things very sweet. The tricky thing about not using sugar is that sugar prevents ice crystals from forming. A little vodka (or any distilled alcohol) could address this problem, but I haven’t tried it yet. If you make chocolate ice cream, chocolate extract adds more chocolate depth to any chocolate recipe. Time to continue my experiments now that warm weather is here!
I’m going to give this a try, using Linda’s recipe and the jello idea. Will use real whipped cream as opposed to Cool Whip (personal preference). I’ll post results later
Estrogenic means it acts like estrogen–fluid retention, depression, headaches, blood clotting, impaired BG control & an increased risk of some cancers (breast & ovarian). Estrogenic foods have consequences for men also.

Chia seeds have none of these potential side effects, don’t go rancid quickly like flaxseeds & don’t need to be ground to be digestible. Healthy oils, lots of fiber & a delicate flavor.
okay I know betty crocker isn’t THAT LOW but for me thats really good. and also I do not like any of the recipes for the low carb cakes. I have tried a few of them and none are the same as regular cakes. SO yea. If you don’t look at the cake it is a good recipe. And also since you can use different kinds of the vanilla cake you can alternate the carbs to suit yourself.
Nothing would make me happier than having you as a neighbor (& official taster)! Only qualification need for OT is an ability to say, “that’s truly awful.”
Any good cook has failures - both my partner and I have had some pretty impressive ones, but when you get it oh so right, it’s really easy to for get about the ones that went wrong
You and me both - I have a couple of uncooked cheesecake recipies that I have modified to lower the carb level, and they are oh, so good. I just haven’t yet had a total success with a baked cheesecake. Must keep trying, at least the failures are ok to eat, just don’t look quite right
