Here’s the recipe. Happy Fourth!
(I eat with unsweetened almond milk, or without almond milk for a snack.)
1 cup flax seeds
1 cup sunflower or pumpkin seeds
1 cup unsweetened shredded coconut
1 cup chopped pecans
1 cup chopped walnuts
1 cup sliced almonds
3 ounces virgin coconut oil (or melted, unsalted butter)
3 teaspoons cinnamon
2 TBS vanilla extract (or, you can use maple extract, or a combo)
3 packets of Splenda ( I use stevia)
In a large roasting pan, mix everything together. Toast in the oven at 325 degrees for about 20 minutes, stirring every 5 or 10 minutes. Keep an eye on this because it can burn easily, esp if you chop the nuts too fine.

sounds good, thanks. I like everything except for the cococut. What effect does coconut have on your BS?
if it’s unsweetened, not too much (4 or so carbs?). I’m sure you could skip it. - I actually have not tried this, but Gerri is a good friend, and a lot of our members were commenting on this recipe.
