Is there a good tasting low carb cereal?

I really miss eating cereal - does anybody have any recommendations for a good low carb cereal? I’m talking about cold cereal. Thanks!

The one that I eat is Special K Protein Plus, 3/4 cup 14g carbs and 5g fiber.

Go to this link, and under Special K cereals column, its the last one, its called Protein Plus.

good to know! i LOVE special K

Here’s one I make myself. Lots of fiber & healthy Omega 3s. Very low carb & filling. Also good for a snack. Carb count at the bottom.

Flax Seed And Nut Granola

(I eat with unsweetened almond milk–2 carbs per 8 oz.)

1 cup flax seeds
1 cup sunflower or pumpkin seeds (I use pumpkin seeds)
1 cup unsweetened shredded coconut
1 cup chopped pecans
1 cup chopped walnuts
1 cup sliced almonds
3 ounces virgin coconut oil
3 teaspoons cinnamon
2 TBS vanilla extract (or, you can use maple extract)
3 packets of Splenda ( I use stevia)

In a large roasting pan, mix everything together. Toast in the oven at 325 degrees for about 20 minutes, stirring every 5 or 10 minutes. Keep an eye on this because it can burn easily, esp if you chop the nuts too fine.

Lots of fiber, filling & yummy.

Granola Carbs
One cup 9.5 carbs
3/4 cup 7.1 carbs
1/2 cup 4.7 carbs

Gerri, Wow… I am going to try this!!! sounds good! Thank you!

Hope you like it. It’s addicting! Great to munch on on its own. Smells great while it’s cooking, too. I make a lot at once. Let it cool thoroughly before storing.

oh special k is my favorite.

Hi Andy,

I’ve doubled & tripled the recipe & store it in glass jars. The recipe makes 6 cups. I use stevia in place of Splenda. I think it would be fine unsweetened because the vanilla (or maple extract), coconut & cinnamon give it wonderful flavor, but I haven’t made it without stevia. You can leave sweetener out completely & always add it later, if needed.

You can make your own healthy low carb hot cereal with Bob’s Red Mill ground flax seed. Mix it with whey protein powder and if you like bran. The proportions are up to you. Boil water and stir it into the cereal.

You can eat it plain, or put some cream or 1/2 and 1/2 on it. Sprinkle nuts or sugar free grated coconut (buy it at the health food store) on top if you can use the calories.

Hi Andy,

I can’t handle grain in any form without huge spikes. Yes, the granola is crunchy. I eat it cold, but it would also be good heated up with milk to make porridge. It won’t get gluey like grains. I don’t care for cow’s milk & the lactose sends me high, so I use unsweetened almond milk.

After it’s roasted, you can add peanut butter, almond meal (or golden flaxseed meal or protein powder) & some more unsweetened flaked coconut to make into balls & refigerate. In the heat the peanut butter will get mushy, though.

I don’t break the flax husks. While you don’t get the nutrition from unbroken seeds, it’s a lot of healthy fiber. I use golden flaxseed meal for baking.

Gerri, You should make this and start your own business…you have so many wonderful ideas!

I should! Want to be my West Coast distributor?

YES! I am very good at marketing too!

It’s a deal!

Sounds so good! Thanks Gerri.

Hi Andy,

Have no idea, of course, about availability where you live, but where I am all the ingredients are available in the local supermarket. And I live in a very small town. Unsweetened coconut flakes are in the baking section & they have flaxseed products & almond meal in a tiny health food section of the store. If you can’t find virgin coconut oil, substitute unsalted melted butter.

No cooking skills needed:) Mix in a roasting pan & bake. Easy! Don’t chop the nuts too fine or they’ll burn.

Diet makes all the difference in the world. You’re already getting wonderful exercise, which most people find the more difficult part.

Enjoy!

Sprouted Wheat Berry Cereal. It is both delicious and easy to prepare.

soak 2 cups wheat berries in water for 24 hours. drain and rinse, put back in container and let sit out until sprouts form.(keep the berries moist, not wet) After this store in the refrigerator.

To 1/3c berries I add pecans, blueberries, a little banana, or chopped apple, basically anything that your body can handle, and I don’t add sweetener. I also use a little half and half instead of milk.

My husband who is non diabetic loves this. Since the berries are soaked they are chewy and do not need to be cooked, and they are packed full of nutrition.

When I eat this cereal, my numbers stay where they should be

Patricia,

Me too! I love Glucerna Crunchy Flakes and Almonds Cereal. It’s a great low carb cereal. I’ve had it with all kinds of milk, and it tastes great with all of them.

I hope this helps!

Thanks for the recommendation. I bought some of the Special K Protein Plus today and plan on having that tomorrow morning. I’ll try the Glucerna next.

Question for dusk: what are wheat berries?
