I am making a pesto sauce that I add almonds to. You could also add pine nuts. My pasta I add it to is about half steamed broccoli and a pasta made with chia seeds. Kind of like sneaking protein in there and the veggies make it not so high in carbs.
New to TuDiabetes and this group in particular. Excited about sharing our passion about how food can be delicious and diabetic appropriate.
As a side note, I cook for two people. (Myself and my partner)but as we all know recipes can be springboarded or increased to fit your particular needs. :)
Here's my plan for tonight's dinner:
Black Bean and Bacon Soup (1 C.) Zucchini Fritters (Approx. 3 Silver Dollar Size)
Tossed Fresh Salad with 1/2 Tomato (3 C. Greens)
Dressing for Salad Amount Optional
Estiamted Static Carb: 59 Variable Carb: Dressing
Black Bean Soup Cook 1 lb. Bacon (Dont worry...reduces to 5 oz :) )
Set aside.
Make a roux with 2 T of Butter and 2 T of flour.
Incorporate 3 C Bouillon of your choice. (I go with beef)
Whisk heavily to incorporate roux.
When liquid is lightly thickened incorporate rinsed black beans. (I use a 30 oz can)
Simmer stirring occasionally to heat beans.
Process soup in blender to make smooth.
Add to soup pot and maintain heat.
Incorporate crumbled bacon. Adjust seasonings.
I usually go with salt (of course) and oregano.
Estimate Carb: 1 C. 38 Grams.
Zucchini Fritters 1 Large Zucchini Grated with skin on
2 Scallions, sliced
1 Egg, whisked
To taste: Dill, Parsley (Mint?)
1/2 C. Feta Cheese
2 T Flour
2 T Bread Crumbs
Incorporate ingreidents and form silver-dollar size disks. Sautee lightly in Olive Oil.
NOTE: Try to place grated zucchini on paper towels to absorb more moisture.
Estimated Carb: 1 Silver Dollar size fritter 5.5 Gram
