Since diagnosis back in sept, I have started eating breakfast. Prior to this, I tended to skip breakfast and snack through the morning. On the advice of a dietitian, I stopped skipping breakfast and started eating in the morning. It has certainly made a difference.
However, I have run into a problem:
My breakfast is boring as hell. It’s usually toast and peanut butter, sometimes cereal and a hard boiled egg. Depends really.
What I am looking for is breakfast suggestions to spice it up. I have limited time to at, primarily because I’m lazy and I end up oversleeping. (I know, I know… ‘just get up earlier’… I’m working on baby steps here.)
Any suggestions are desired and welcomed. What do other people have for breakfast?
I usually have one of these three options:
White (full fat) yogurt with fresh fruit, nuts and oatmeal. (36-48 grams of carbs)
Or cottage cheese, tomato, wholegrain bread and ham. (42 grams of carbs)
Or a homemade muffin with double-cream topping. (32 grams of carbs)
(and a cup of English tea with skim milk or coffee with milk :-)) (about 4 grams of carbs)
Nifty suggestions. I detest raw tomato, so that one is out, but the idea is sound.
Here’s a couple of quick breakfast ideas that I enjoy:
1 cup of Greek yogurt with 1/3 cup of Kashi Go Lean Crunch cereal and 1/2 cup of blueberries or strawberries
Cheese quesadia made on a single whole wheat tortilla. Fruit on the side.
Egg salad sandwich on one of those 100-calorie whole wheat bun. Fruit on the side.
1/2 cup hummus with some whole wheat crackers. Fruit on the side.
And I always start my day with a cup of black tea with soy milk.
