Oh, yes, saving carbs where you can makes a difference. I never could stand cow's milk & can't remember the last time I had a glass of milk. Hated milk as kid, but loved yogurt. Hope you can find unsweetened.

Almond milk is more expensive than cow's milk in the US also.

How I wish there was a Trader Joe's where I live! I get it in the health food section of the local supermarket. TJ's will definitely have it.

Keep an eye while it's roasting so the nuts don't burn. Depends on how small you chop them. I don't cut them too small because I like the texture like granola.

You can also look up Ginny's Low carb Kitchen. She has a recipe for making your own cereal using almond meal, flax meal and cinnamon. It looks yummy but I have not had the time to try it yet! She has a little video posted on the blog showing you how to make it.

Be careful with flax meal because it's a phytoestrogen (flax seed oil is fine). Flax meal also goes rancid easily.

That sounds sooo good. I think the main thing I miss about cereal, though, is the convenience. This takes a while to make. I prefer eggs and bacon, but I'm usually cutting my time close in the mornings and cereal would be so handy. I've been trying a "low carb" bread made by Julian Bakery. I can order it on the internet and it's delivered to the house. Frankly it doesn't taste very good, and the slices are microscopic, but it's handy to smear some peanut butter on when I'm headed out the door. It doesn't raise my BS, but I'm T2. If I have time, I like Greek yogurt with a tablespoon of fresh blueberries and a squirt or two of artifically sweetened whipped cream from a can. Makes me forget all about cereal.

Yay! They did have unsweetened almond milk in my health food store - "Pacific Brand" - $2.59 a quart. I'll still check my market when I shop again as I'd only looked in the fridge. Now if I am ok with the taste (I'm not big on substitute foods in general) it will really cut carbs as I usually count 5 in the morning for milk for my capp and a little in my eggs (1/3 cup).

Someone gave me a gift of a hand made cotton thing filled with flax seed that you can put in the microwave and then use around your neck for neck pain. It stank so bad I immediately threw it away! I sure hope those of you who use flax seed don't have to deal with that smell - maybe it was from putting it in the microwave.

That's what I pay for Blue Diamond Almond Breeze. You shouldn't be able to taste a difference in your eggs. Not sure about capp. I don't drink much coffee. When I do, I use heavy cream watered down a bit since cream has so few carbs.

Oh shoot, I just thought of something obvious. My main use for milk is in my capp and I froth it - who knows how it will froth! I think I'll make one later and give it a try - I'm not too optimistic though. Oh well.

Ok, if anybody is interested, I went ahead and made a capp using the unsweetened almond milk for an experiment (good excuse). I froth my milk rather than steaming it. With the "milk" room temp/a bit cool it hardly frothed at all. With milk heated in the microwave it made decent froth. (odd because with regular milk cold is better). The taste was only a bit off but I could get used to it. I don't know if I'd like it for cereal or to actually drink a glass. So I consider the experiment decently successful!

I have the same problem and now I'm pregnant so I'm not allowed to eat it. I DID find that before I stopped eating it, that almond milk instead of regular milk helped A LOT with my sugars being in a better range. Also, if I bolused about 30 min before I ate. I don't know if that will help anyone!

Glad it worked for your capp! I wouldn't want to drink a glass of almond milk, but I don't like regular milk & never drink it, so no comparison there for me.

I didn't think I could reduce my carbs too much but I've gotten down from "under 100" to 39-59 and this will take it down 5 more. If I don't lose weight now I'll shoot myself..lol (kidding)

God Bless sugar free vanilla syrup! I use it in so many things and it makes all of them taste so great! I never thought to put some in almond milk. Great idea.

I should try the unsweetened almond milk again. I was using that before (not for cereal, but to drink) and it worked really well for me.

What are you not allowed to eat? Cereal or almond milk? I'm pregnant too!
