I love cereal, but cereal does not love me. I ate 1 cup of Kashi Go Lean (36 carbs, with almond milk 1 carb) and now my BS are 267. :0( I even gave myself an extra unit plus correction. Looks like an additional workout is in my near future. BOO! (It was so good though)
The only cereal that I find I get no spike with is Fibre One Crunchy Original. It is only 10 carbs + 1 for the almond milk. I have also boosted the fibre/protien by adding a few (6-8) raw almonds.
Check that your BG doesn't go low in a few hours. I'm thinking that the fiber made the carbs absorb much quicker, then you'll probably be without sooner.

The only time I ate cereal is when I was on vacation. I got the same results you did. I quit eating cereal because I don't really like it that much anyway. Now I eat an omelet, bacon, and fruit instead.
