I’m putting together a “go to cookbook” for myself. I basically want to simplify my life when trying to figure out what I am going to make for meals. A cookbook that basically fits into a couple of healthy options categories, and I NEED all of your help.
What it really comes down to, is that I don’t want to have to think about what I am making for meals. I want some quick low point, good for me meals, that are tested tried and true from diabetics who are working the program and have worked the program. I want to go into my kitchen open my home-made compiled cookbook and pick something easy and delicious out of it.
Here are my qualifications for my cookbook (in no particular order):
1. recipes that are low points and yummy-divine-delicious!
2. low"er" carb
3. 5 ingredients
4. SUPER HEALTHY
5. quick - this can include crock-pot
As some of you may know I just recently went back on WW after doing it before and losing a considerable amount of weight (which I put back on) and have come back to my old love in the hopes of getting and reversing my diabetes. I want to spend more time on exercising and less on thinking about what to make and eat. I have a couple of 3T’s recipes but I need more.
I’m sure ALL of you have something that fits into my 5 categories.

Asian Cucumber Slaw
1 cucumber
1/2 cup rice vinegar
2 tablespoons olive oil OR 1 tablespoon sesame oil
1 teaspoon splenda
ginger (pickled) you can get it by sushi or at asian grocer (or if you don’t have this and like spice use red peper flakes instead)
salt and pepper to taste
- Peel and grate a cucumber, queeze out as much water as you can
- Add rest of ingredients
- chill for a few hours
