All of a sudden it’s 80+ degrees and humid. I now need iced coffee every afternoon.
I’m back also to some fresh cold foods of my childhood . . . that I realize are low-carb!
Today I made salmon salad (from canned)–super-satisfying on locally-grown romaine leaves.
For pre-gym fuel: a bowl of “farmer’s chop suey”: chopped cucumber, radishes,tomato,mixed with cottage cheese,seasoned with salt,pepper,& paprika.*
Its cold weather here, but another option for hot weather food is frittata with salad, great for dinner or packed lunch. Frittata is a great user up of that odd slice of ham, the last bits of a roast, cold roast sweet potato, onion and tomato, green veggies are brilliant too.
It’s always hot here where I live. How I wish for cool weather!
I like to eat salads, and eggs in all forms.
Sometimes, nuts for a snack.
Iced lemon water, iced coffee… all good…
Though this might not be super low-carb, but there’s something about cottage cheese and salsa that is perfect for the summer (or cottage cheese and canned tuna in a mock tuna salad).
Now that it’s summer, I’m living purely off iced coffee: black with 3-4 Equals. <3
100g Raspberries
Juice 1/2 Lemon
1/4 cup Coconut Oil
1 cup Coconut Milk (from the carton)
1/4 cup Sour Cream
1/4 cup Heavy Cream
1/2 tsp. Guar Gum
20 drops Liquid Stevia

I like to cut up cabbage and grate carrot and then I have the basis for salads or stirfry through the week, I will add finely sliced white onion, celery, apple, snow peas, zuchinni, cucumber, anything I fancy and then a little mayonnaise mixed with plain yogurt. It is very handy to have this base salad to add to whatever protein you decide to have for a meal.
Fresh raw green beans, berries, and this sesame lime thai dressing I found at Aldi. Delicious and easy! Also, I enjoy cottage cheese with a little bit of pepper.
