Today I’ve made low carb bread, low carb cookies, and low carb chips, and was thinking about what I want to eat tomorrow and wondering how I could do a peanut butter and jam sandwich on my low carb bread. So I googled “low carb jam” and found this!
Seems brilliant to me. I ate chia pudding and berries this morning (trying it instead of oatmeal) and never thought of using it as a jam. I’m going to make it tonight and see how it tastes in my sandwich tomorrow.
I used strawberries, so I couldn’t get them smushed up as finely as I’d like, atlhough I believe strawberries are lower in carbs than raspberries, and they’re all I had (except for blueberries, but I wasn’t at sll sure how those would work). However, it tastes exactly like jam, and has a similar consistency. The chia seeds just soaked up the strawberry juice and are barely noticeable to me. Definitely a recipe I will be repeating!
