Okay so I finally tried it… Spaghetti Squash in place of real pasta…
What I do or did was boil the spaghetti squash for about 30 minutes (times will vary upon size of squash)… basically until a fork easily goes into the squash. Then cut in half and scooped out the pumpkin looking seeds and guts… Then take a fork to meaty part and watch as it unravels in a spaghetti like form…
While the squash was boiling I cooked up some of my favorite spaghetti sauce, Arriabata and added veggies and italian sausage to it… basically I cheated and doctored up the sauce…
After the veggies and meat were cooked I added the squash to it and light tossed it…
It was truly an awesome and simple dish!!! The squash wasn’t mushy so it had the texture of real spaghetti… My roommate doesn’t like squash at all but LOVED this!
I will definitely be making this again…

WOW … this is so refreshing to read. Thank You Kaayle. I have always wondered about spaghetti squash, what it taste like, how you cook it and what other people thought of it. I didn’t want to go buy this and waste my money if it’s not any good. I am definitely going to give the spaghetti squash a try! How many carbs does it have? Where do you find this … in the produce section of the grocery store?

I have made spaghetti squash, just not too recently. I actually make it a little differently. I slice it in 1/2 lengthwise, scoop out the seeds and place it on a plate skin side up. I microwave the squash for 8-10 min. ( depending on the microwave) When it is soft I scoop out the meaty part, which really does look like spaghetti and pour on the sauce. Of course, you can use store bought or your own.
A- you can get the squash in the produce section of a large supermarket. I get my produce at a Green Grocer so I get it there.
Not sure of the carbs, but isn’t many ( certainly much less than pasta.)

Here are some sites you may find useful when preparing and what to expect… Glad you too are going to try it! Spaghetti squash actually has a light sweet flavor but it works well as pasta… The great thing is it doesn’t get mushy the next day and holds its crispness… I’m sold on this one!
