We do Meatza at our house occasionally so I decided to try something similar with chicken. I particularly liked this way of doing it since everybody could choose their own toppings! So I took a bag of boneless, skinless chicken breasts and I butterflied them so that I was working with pieces of chicken of equal thickness for an equal cooking time. I seasoned them with garlic powder, onion powder and some italian herbs and put them into the oven at 325 degrees for 15 minutes (turning them over at 7 minutes). Take them out of the oven and pour either lo-carb pizza sauce or tomato sauce over all of the chicken. For those that wanted onions, bell peppers and mushrooms, I sliced those and put them on top of the sauce. Put them back into the oven for another 15 minutes. Remove them once again and load with whatever other toppings you like (ex. banana peppers, pepperoni, turkey pepperoni, bacon, black olives, jalapenos, canadian bacon, etc.) and whatever cheese combo you like (we used 2% mozzarella). Put them back in the oven until the toppings are heated through and the cheese is gooey goodness! We each got two pieces (4-6 oz) and I served it with a salad. The non low-carbers got garlic bread. I do almost exactly the same thing with chciken and toppings and pizza sauce at our house This is safe too for my wheat and gluten intolerant daughter to eat as well.
