Dana Carpender is one of my favorite cookbook authors. I'm having a slow cooker dish tonight, short ribs. I've really gotten into the whole slow thing.
Sadly, I have also had my share of kitchen injuries. I'd like to blame my knives which I always keep wicked sharp, but in truth I'm just clumsy.
ps. Dana apparently has struggled with pre diabetes and writes quite candidly in her blog and often includes additional recipes.
I served my short ribs with garlic parmesan mashed cauliflower. My non-diabetic wife who is now following the same diet loved it. I think many people are afraid of being deprived or not eating well on low carb. That is not my experience.
Over the years, I have developed a bunch of techniques to avoid losing fingers. There is a good book on knife use and if you search, some youtube videos on technique.
