Is flax seed meal tasteless? Would a child notice? I would love to sneak in some flax seed in salad dressing.
If you get it ground up enough without turning it into “enriched bleached flour”, I am sure no one could notice. Someone wrote a book about sneaking great nutrition into kids favorite foods.
I has a bit of a nutty flavor, but when I mix it in with other flavors, it is pretty subtle, but I actually like it. Not sure how much a kid would! But try it mixed in with something.
I tried making “oatmeal” with ONLY flax seed meal and NO oatmeal. That was too much flaxseed for me.
I think it needs to have other flavors around it!
Here’s my favorite flaxseed meal recipe, which I think a kid would LOVE:
3 Minute Chocolate Carmel Flax Cake for One
Ingredients:
2 tablespoons melted butter(0 carbs)
1/4 cup Ground Flax Meal (5g carb, almost all fiber- check the packaging)
1 tablespoon Cocoa Powder (2g carbs)
1/4 teaspoon Baking Powder (1g carb)
2 tablespoons liquid sweetner or Davinci’s Carmel Sugar free Syrup (0 carbs)
1 Egg (0 carbs)
How To Prepare: Melt butter in a small microwave safe dish, mine was about 2 1/2 inches x 5 inches and about 1 inch deep. Mix in all ingredients and microwave for 1 minute in the same dish.
Let cool slightly and enjoy.
Good with ice cream, whipped topping or plain yogurt.

Ah yes. Cucumbers. Even when I was a little shaver, my mom would always peel a cucumber and put it in my lunch; also on a cub scout outing. Mmmmm
I love olives. But they have such a high sodium content.

Chicken Peach Bite
1 fresh peach half with peel
1 tablespoon canned chunked chicken breast in water
1 tsp. white balsamic vinegar
1 tsp. sliced almonds
Spoon chicken into peach half. Drizzle with vinegar and sprinkle on almonds.

cheese is high in calories tho, so some of us have to be careful. which think is ridiculous because i absolutely love cheese.
cheese + anything = me a happy camper.
I have to say I am an overall weird eater. I LOVE to have a bag of cut up colored peppers (yellow, red, orange), carrots, and celery on hand at all times. Before being Dx I was a grazer and miss that most. So I make up for it in grazing thru my plain veggies without guilt.
In my home we always have a platter of veggies ready for munching. My two children think that everyone loves their broccoli and pea pods. Its only now that my 3 year old realizes that she eats very healthy and shes proud, which in tun make me proud. Its always funny to argue with a 3 year old in the grocery store that we can’t eat the broccoli right now- it has to be washed- so how about a doughnut till we get home, her response? It will send her sugar soaring! Too funny, shes not diabetic Mommy is, but if it gets her the broccoli, shes all for it.
I am a grazer, too, but I used to just give my self multiple, multiple daily injections. Now I give myself multiple (as many as required) boluses. Just keep testing!
My kids used to have a plate of steamed broccoli as hors d’eouvres while they watched Sesame Street in the afternoon.

and when there’s a sweet craving, I’ll confess to loading up a soup spoon with a shot of whip cream from the can!
I really like Genisoy Soy Crisps in the deep sea salted flavor. They have 15 carbs and 2 grams of dietary fiber for 17 crisps. They aren’t exactly low carb, but they have a good amount of protein (8g) and satisfy my need for something salty.
That is too funny! She’s bound to be a healthy eater for life!!
Its pretty tasteless and easy to disguise in things like shakes. I also use it to coat marinated tofu that I will be frying in just a touch of olive oil. I also use flax seed meal for a substitute for eggs when baking since I eat a vegan diet. But you could just add it to homemade cookies, cakes, bars, muffins, etc in place of some of the flour if you wanted. I even add it to my cereal in the morning. Hope some of these suggestions work for you.
One’s actually a vegetarian with vegan leanings…good thing she likes broccoli!
Do you have a Wegmans grocery near you? They have all kind of specialty stuff.
We could add re: peanut butter – for a really low-carb and healthy version of PB, try Smucker’s all natural regular or crunchy peanut butter. It’s delicious and lower in fact than regular PB.
Also try:
Raw cauliflower florets dipped in a bit of Ranch dressing or dip (low fat if possible).
Rice Cakes – cheddar flavor, and
Melba Toast (6-8 pieces) w/ regular or chive-flavored whipped cream cheese
Plain popcorn - up to 3 cups is 15 g cb
Your cauliflower idea reminded me of my current faves…roasted veggies. Cauliflower or asparagas are great drizzled with a little olive oil and sea salt, roasted at a high temp till brown and served with dip. Most veggies take 45 min to an hour, but the asparagas only needs 10 to 15 mins.
