Will try your granola. ate all five croissants that we bough in France really yummy but lethal the more so when eaten in excess.
congradulations on your progress and improved A1c. I eat a vegan diet so I don’t know if you will like these suggestions for breakfast but it provides some really good protien and healthy carbs.
Tofu scramble
1lb tofu
onion, bell pepper, mushrooms, kale/collard greens (chopped fine)
salt, pepper, curry, other spices you like
nutritional yeast, flax seed, (ground)
in non stick pan, “fry” mashed tofu until dry and beginning to brown, add veggies, and seasonings, and cook until tender. Finally add the nutritional yeast and flax seed and cook for one more minute. This is tasty by itself or I like to wrap it in a large collard leaf.
Tofu, fruit, flax, smoothie
blenderize 4 ounces silken tofu
with soy milk, frozen berries, flax seed meal, cinnamin, and sweetener (I use Stevia).
Little more carbs but very healthy and satisfying.

Just a word of caution in case anyone has thyroid problems, which many diabetics do. Soy products should be avoided if you’ve got thyroid issues.

Rixie, I was getting spikes in the morning as well. What worked for me was to double my usual waiting time after taking the insulin but before eating. Normally I wait 15 minutes after taking insulin before I eat. For breakfast I wait 30 minutes. This has helped keep that breakfast bump under control.
I have honey nut cheerios or oatmeal or avocado and toast for breakfast.

Sorry! I should have included that I used 2 Tablespoons of vanilla extract. I’ve never seen vanilla powder for sale where I live.

Yes, but eating low carb affects fat intake differently.

I am sorry to not be able to add any great ideas…but to commiserate, I miss my “healthy” whole grain cereal and berries or banana and MILK as much as I miss homemade chocolate chip cookies and MILK! I do like egges, so can deal, but…poor us.
That said, I am going to try Khurt’s suggestion of waiting longer after dosing. The higher fat idea scares me…think about pancakes with butter…danger!..but I will give a croissant a go, for sure, anyway.

Oatmeal and my real fave – cream of wheat spike my bs badly. I hope the benefits outweigh the cost and eat them on occasion. Has anyone tried the Glucerna cereals? Any thoughts?

they are wonderful on my home-made chia/sesame flat bread with avocado and vinegar pepper hot sauce!!!

Try it with whole wheat bread, though, not white.
Perhaps it is the amount of cereal you are having. I am allowed 1/4 cup untoasted muesli, low fat yogurt, fresh fruit and low fat milk for breakfast. Before I saw the dietitian I was having 1/2 cup muesli and ordinary milk, yogurt and fruit and that spiked me. I think the yogurt was whole milk too. Changing to less cereal, low fat milk and yogurt made it possible for me to maintain my nearly normal breakfast.
I doubt that bought croissants are made with butter, most likely made with trans fat stuff and lots of ‘numbers’ in the ingredients. Have you tried egg white omelette? Not quite so eggy as whole egg omelette.
I’m type 1, so this is what works for me. My short term insulin peaks in 1 1/2 hours.
First - you are fabulous for dropping your A1c so quickly. That means your efforts have been successfully! Yea!
Second - since we’re all different, so just because it works for me, ti doesn’t mean it’ll work for you, but it might.
Third - since you are new, even veterans make this mistake - “sugar free” is NOT “carb free”. They might sweeten it with apple juice or something. Look at carb content.
Kashi cereal - I love it, too, but I eat it with almond milk. Cows milk is more filling, but I cup cows milk raises my bg 80-100 points in 1 hour, then it does nothing to my bg. The almond milk is free for me.
Oatmeal - My rules to slow down the carb absorption of oatmeal:
- Only use steel cut, old fashioned, or rolled oats - never use quick or instant
(Rolled oats cook in the microwave in like 1 to 1 1/2 min. Then mix in the other things.)
- Always eat with cinnamon
- Also, you can, either add almond slivers or almond milk.
- I don’t, because I have been too lazy to try it, but a lot of people find it helpful to add ground flax seed.
