Good for you, Jan. I not only want to keep my weight stable but I just plain like eating healthy. I feel better and you know what, when your diet is based in fresh local foods, they taste better than processed and packaged foods!

In addition to enjoying not having to carry a bag full of stuff with me and constantly think about how what I am eating and doing may be affecting my blood sugar, I'd have an ice cream eating competition with my husband to see who could eat the most ice cream. He'd probably win, but at least I could give him a run for his money!

I would not change or do anything different. I'm healthier now than I since I was in my 30's.

I think I'd pack a backpack and off on a trip I'd go! I wouldn't have to worry about medicine or food - it'd be amazing! It'd be liberating. But oh man the bagel with cream cheese that Tim mentioned sounds good! lol. So the first thing I'd eat is just that.

I like a slice where you melt Mars Bars, oh so yummy and oh so forbidden now, even more enticing when goodies are forbidden! Judith, thanks for the taste memories.

After stretching, I would go on an intense run. A long intense run. A Forest Gump type run (http://www.youtube.com/watch?v=PMO3Swfc4FA ). But what is key is, I would not bring anything (except maybe my cell phone). I would run with out a backpack and juice, gluco tabs...and I would not temp basal. This is my dream, anyone else?

I would thank God, Praise Him continually. Then I would tell ALL my friends/family in person, by phone email, fb, whatever. throw all my diabetes gear away. Invite everyone for a big feast at my home, asking each one to bring a carba-licious treat.. I would provide everything els( meat, veggies, salads and I would taste all the brownies, cornbread, pasta-based casseroles,cakes.. I would make 25 gingerbread men( and women) and then eat 5-10 of them. Praise God and dance "Like David did" all night and not have to check my blood sugar!! After this weekend splurge, I would take a Zuumba class and bicycle on the same day ( which I haven't figured out how to do without too many lows ).. I would send my endo a wonderful goodbye. I would join up with other I "used to be" diabetics and rejoice with them.Then I would go back to eating a relativey low-carb, protein and veggie -filled diet, 'cause I know I would feel better and stay relatively thin that way!!
