I wish all my Jewish friends a happy Hannukah 2015. I’m making potato latkes right now and we eat in a few minutes. I promise to post my low carb “real” latke recipe soon. What are you doing for Hannukah?

My daughter is making a version of the recipe for carrot and spinach latkes that MarieB posted. She is going to substitute potatoes for 1/2 of the carrots. l know, not as low-carb, but it’s Hanukkah and we don’t do low carb on Hanukkah! HCHF for us tonight!!!

We’ve got several invited throughout the week. Tonight, we’re just going simple with the local kosher burger place. Fries are modern-say latkes, right?
