Pork Tenderloin Medallions

I buy all natural pork tenderloin, slice into about 1 in Medallions place 6-9 per freezor bags for meals. There is proabaly a recipe out there like this one but this one is just me being creative. The presentation looks nice with the salsa on top.

  1. Marinade using Amazing Taste for Pork
    I don’t use the whole packet except when I use the whole tenderloin and add a bit of water and marinade all day. Tonight I cooked 9 pieces and served 3 people. I buy the AT at Food Lion but it is available online. I also use the beef and burger ones. I marinade flank steak all day. It’s my son in laws favorite. I cook in in a pan and then sometimes do the remaining cooking on the grill.
  2. Flatten before cooking
  3. Grill or cook in hot pan using Pam for about 3 min on each side
  4. Top with Spicy Peach Salsa by Joes Market ( or similar )

I served mine tonight with a small serving of brown rice and steamed broccoli.
