I'm day to day. Neither of these teams have a huge appeal. I'll probably eat something typical.
My team lost in the playoffs... poor Saints! :( I'll probably still watch for the commercials but no food plans.. now if the Saints were playing, it would be a different story!

We are usually joined by none diabetic friends...And in my time zone, Superbowl is early early morning (broadcast starts at 7:30 am!). I usually prepare brunch thingies...pigs in the blanket, omelet filled with ham, chicken and veggies, tuna salad on pita bread and breakfast burritos. No alcohol though. Go Giants!

I went to a Ladies Luncheon last week and brought a Mexican Spinach Lasange. They loved it. It has no noodles or beans. I think it would make a great dip for the Superbowl.
MEXICAN SPINACH LASAGNE
2 lbs ground beef ( I used organic)
Taco Seasoning
1 can of enchilada sauce
2 boxes of frozen spinach - thawed and squeezed dry
2 blocks of cream cheese softened
1 can chopped chillies
Monterry Jack shredded cheese
Brown up ground beef, add spices and enchilada sauce, set aside.
Mix thawed spinach, cream cheese and chillies. I added a little salsa to spice it up
Take a big lasagne pan. Add 1/2 the taco mix. Add all the spinach mix and sprinkle with cheese. Add the final layer of cheese. You could also add black olive, jalepenos or anything else you want. Bake for about 30-40 minutes at 350.
I'll eat whatever I will eat on that day. I imagine it will be something low carb. I really don't care about the football game.
